Today is pancake day in the UK. Shrove Tuesday or Pancake day is a day in February or March, preceding Ash Wednesday (the first day of Lent) which is celebrated in many countries by consuming pancakes. Their pancakes here are a little different then our pancakes at home. We were able to find American bacon and make breakfast for dinner. The Elders loved our cornmeal pancakes. Here is the recipe:
Grandma Mary’s Cornmeal Pancakes
Mix in mixer:
½ cup sugar
½ cup oil
2 eggs
Add:
2 cups flour
1 cup cornmeal
1 Tbsp baking powder
½ tsp salt
½ soda
Add milk to desired thickness.
